Quick, Easy, Healthy Breakfast 

A simple quick and easy breakfast to prep ahead of time are egg muffins. They are quick and easy to make and also can be made with many different ingredients.

Ingredients:
-Mixed vegetables – 3 Green Containers on 21 Day Fix

-6 Eggs – 3 Red Containers on 21 Day Fix
Prep a 12 spot cupcake pan with cooking spray.

Preheat oven to 350 degrees

Chop your vegetables to fill 3 green containers (3 cups)

Beat eggs in a bowl and evenly divide eggs into muffin pan.

Evenly divide vegetables into muffin pan.

Bake at 350 for 15-20 minutes or until eggs are cooked through.

Store in fridge and microwave for 30-60 seconds.
